Hearty Chili

Ingredients
- 1 lb ground beef, turkey, chicken (or even cubed chicken breast), or none if veggie
- 2 med. onions
- 1 green pepper
- 5 stalks celery
- 2/3 stick butter
- 1 tsp salt
- 1 tsp pepper
- 28oz can petite diced tomatoes
- 1 largest can of Kidney Beans (I like the dark, but light is good too)
- 2 tab. ground yellow mustard spice
- 3 tab. chili powder spice
Instructions
- Chop all veggies. In 4-5 quart Teflon Saucepan, saute all cut veggies in butter over medium heat. About 5 mins. Set aside softened veggies in bowl. In same saucepan, cook meat. About 5 mins.
- Add veggies back in and stir together. Cook 5 mins.
- Add all spices. Stir.
- Add tomatoes and beans. Stir.
- Bring to boil. Stir.
- Reduce to simmer over low heat.
- Cover.
- Cook for 90 mins. Stir Occasionally.
- Remove from heat. Allow to cool.
- Serve and/or freeze for later.
Notes
- Serve over rice, pasta, or my husband's favorite, mashed potatoes.
