Chocolate Pumpkin Bread

Ingredients
  1. 2 C white whole wheat Flour (or other flour)
  2. 1 tsp baking soda
  3. 3/4 tsp baking powder
  4. 1/2 tsp salt
  5. 1 tsp cinnamon
  6. 1/2 tsp ginger
  7. 2 ripe bananas, mashed*
  8. 1/2 C canned pumpkin (only ingredient is pumpkin)
  9. 1/2 C 100% pure maple syrup
  10. 1/3 C melted coconut oil (or other oil)
  11. 1 tsp pure vanilla extract
  12. 3/4 C chocolate chips, divided
Instructions
  1. Preheat oven to 350.
  2. Grease loaf pan and set aside.
  3. Combine and mix all dry ingredients in a large mixing bowl.
  4. In a separate bowl, combine and mix all wet ingredients.
  5. Pour wet into dry and combine to form batter.
  6. Fold in 1/2 C chocolate chips to batter.
  7. Smooth batter into prepared pan. Press remaining chocolate chips into the top.
  8. Bake for 30-40 minutes until fork comes out clean.
  9. Cool and enjoy!
Notes
  1. *If bananas aren't an option, the bread also tastes great with dates as an alternative sweet fruit. Sub 1 C chopped dates, soaked in water for 5-10 mins for bananas.
