Ingredients
  1. 1 lb ground beef, turkey, chicken (or even cubed chicken breast), or none if veggie
  2. 2 med. onions
  3. 1 green pepper
  4. 5 stalks celery
  5. 2/3 stick butter
  6. 1 tsp salt
  7. 1 tsp pepper
  8. 28oz can petite diced tomatoes
  9. 1 largest can of Kidney Beans (I like the dark, but light is good too)
  10. 2 tab. ground yellow mustard spice
  11. 3 tab. chili powder spice
Instructions
  1. Chop all veggies. In 4-5 quart Teflon Saucepan, saute all cut veggies in butter over medium heat. About 5 mins. Set aside softened veggies in bowl. In same saucepan, cook meat. About 5 mins.
  2. Add veggies back in and stir together. Cook 5 mins.
  3. Add all spices. Stir.
  4. Add tomatoes and beans. Stir.
  5. Bring to boil. Stir.
  6. Reduce to simmer over low heat.
  7. Cover.
  8. Cook for 90 mins. Stir Occasionally.
  9. Remove from heat. Allow to cool.
  10. Serve and/or freeze for later.
Notes
  1. Serve over rice, pasta, or my husband's favorite, mashed potatoes.
