Raisin Puff Cookies
A tasty alternative to chocolate chip cookies, raisin puffs satisfy a sweet tooth without as much guilt!

Ingredients
  1. 1 c. raisins
  2. 1 c. water
  3. 1 tsp vanilla extract
  4. 1 c. shortening or butter
  5. 1 1/2 c. sugar
  6. 2 eggs
  7. 3 1/2 c. flour
  8. 1 tsp baking soda
  9. 1/2 tsp salt
  10. 2 tsp vanilla extract
  11. 3 TBSP sugar
Instructions
  1. In small saucepan, bring raisins, water, and 1 tsp vanilla extract to a boil. Remove from heat and set aside.
  2. Preheat oven to 350 degrees and grease baking pans.
  3. In medium bowl, cream together shortening/butter and sugar. Add eggs one at a time, then vanilla extract.
  4. Stir together flour, baking soda, and salt. Then, combine flour mixture, one cup at a time, into shortening/sugar mixture. Mix dough completely.
  5. Drain raisins and stir into dough.
  6. Put 3 TBSP sugar on a plate. Roll 1-inch balls of cookie dough in sugar, then place on baking sheet app. 2 inches apart.
  7. Bake 9-11 minutes or until golden brown on the bottom and slightly firm to the touch.
  8. Recipe yields app. 3 dozen cookies.
Tips for great cookies
  1. If using butter, ensure it is at room temperature or slightly melted.
  2. For equally sized cookies, use a small, 1/2 inch or 1 inch ice cream scoop.
  3. Remove cookies from oven ~30 seconds before timer and let cool on cookie sheet for 1-2 minutes. Cookies will continue to absorb the heat and won't overcook.
