Recipe: Baked Balsamic Chicken

I am not the greatest chef! Therefore, I love quick and easy dinner ideas. The main reason I love this dish is because it’s so versatile. You can make it light and healthy with lots of veggies or hearty with some pasta. 



Balsamic Glaze






Preheat oven to 350 degrees. 

Place Aluminum Foil on a baking sheet and spray with a non-stick spray. 

Cut Vegetables; any kind! The first time I attempted this recipe, I used medley potatoes, tomatoes, asparagus, and onions. The second attempt, I used red potatoes, tomatoes, carrots, and onions. 

Outline the baking sheet with your vegetables. 

Drizzle olive oil, salt, and pepper over vegetables. 

Place chicken in middle of baking sheet. 

Sprinkle salt, pepper and any seasoning you like. First time I added Italian Seasoning. The second time I tried Garlic Salt. Next time I would love to try Cajun or Peprika. Your preference. 

Drizzle Balsamic Glaze over vegetables and chicken. My second attempt I drizzled extra Balsamic Glaze! Or drizzle less and have it on the side. 

Place in over for about 30-40 minutes or until the chicken reads at 165 degrees. 

Take out of oven, plate, and serve.

Did I mention clean up is a breeze! Just throw the Aluminum Foil away.
