St. Patrick's Day Recipe: Shepherd's Pie

Ingredients
  1. • 3 lbs of ground beef
  2. • ½ bag of frozen peas
  3. • 3 medium carrots, diced
  4. • 1 onion, diced
  5. • 6 tablespoons of Worchester sauce
  6. • 1 tablespoon of minced garlic
  7. • ½ box of beef broth
  8. • 1 teaspoon of oregano
  9. • 1 teaspoon of basil
  10. • 1 teaspoon of steak seasoning
  11. • 1/2 cup of butter (8 tablespoons) *Tip- Kerrygold Irish Butter is my favorite
  12. • 10 medium potatoes, peeled
  13. • ½ cup of milk
  14. • 3 Tablespoons of corn startch
  15. • 3 Tablespoons of cold water or broth
  16. • Salt & Pepper to taste
Instructions
  1. Preheat oven at 425 degrees.
  2. Peel, dice, and cook potatoes for mashed potatoes. Make sure to salt the water well.
  3. While potatoes are cooking put hamburger in a pan to cook. Add a pinch of salt and pepper to meat. Chop up meat finely while cooking and drain.
  4. After removing the hamburger put 2 tablespoon of butter in the pan to cook carrots. Add a pinch of salt while simmering. Make sure to have carrots covered so that they have time to simmer on low heat, should take about 5-7 minutes.
  5. After carrots are partly cooked, add onions. Cook on low heat so that they soften and do not burn.
  6. Once carrots and onions are softened add meat and season with some salt and pepper. Add Worcester sauce, garlic, oregano, basil, and steak seasoning to simmering pan. Keep covered to simmer for 5 minutes.
  7. After simmering add beef broth, frozen peas to simmering mixture. Simmer for another 5 minutes.
  8. Mix cornstarch and water or broth in a small bowl or cup, then slowly (very slowly so you do not create lumps) pour into the simmering pan. Mix well, and set on to simmer after a few minutes it will thicken broth into gravy.
  9. After thickening is completed, remove from heat and either prepare to bake in pan (if an oven safe pan) or pour mixture into a large 9x13 pan.
  10. During the above steps you will need to make the mashed potatoes once the potatoes are done (fork tender). Add the ½ cup of milk as well as 6 tablespoons of butter. Add salt to taste.
  11. Once meat and veggie mixture is added to pan, layer the mashed potatoes on top and smooth.
  12. Place pan in oven uncovered for 30 minutes or until lightly browned on top.
  13. Once browned pull out of oven and let sit for 20 minutes to serve, will be very hot.
Notes
  1. -Use kerrygold butter for that rich taste of Ireland
  2. -Salt the potatoes well while boiling so that they do not need to be salted later.
  3. -Make sure to season well so that it has a hearty taste in the meat and broth. Use more seasonings if needed.
  4. -You can make more mashed potatoes if you want it to be heavier on top, I like a more 50-50 ratio.
  5. -You can use any type of ground meat with this if you prefer something else. Just add the correct type of broth (ex. chicken, chicken broth; deer, beef or deer broth; etc)
  6. -This will serve a lot of people, so be prepared for leftovers or to share
