Three Bean Salad

Let me start by saying, I was never a Bean Salad person, but really wanted to be. I’d tried a few different recipes, and never loved them. When my favorite Aunt put a bowl of this in front of me, I was very skeptical. But, SERIOUSLY, this three bean salad is so delicious. I make a double batch almost every week, and my family loves it. It’s quick and easy, and would be the perfect side to take along to a picnic or BBQ. Check it out, and let us know what you think!

Ingredients
  1. 15oz can cannellini or great northern beans, rinsed and drained
  2. 15oz can kidney beans, rinsed and drained
  3. 15oz can garbanzo beans, rinsed and drained
  4. 1/2 red onion - finely chopped (I like to soak the chopped onion in cold water for 10 minutes first to remove the bite)
  5. 2 celery stalks, finely chopped
  6. 1 cup fresh, chopped parsley
  7. 1 bunch chopped cilantro
For the Dressing
  1. 1/3 cup apple cider vinegar
  2. 1/4 cup olive oil
  3. 1/4 cup sugar
  4. 11/2 tsp salt
  5. 1/4 tsp black pepper
Instructions
  1. Combine all dressing ingredients, and whisk until sugar is dissolved. Set aside.
  2. In a large mixing bowl, mix the beans, onion, parsley, cilantro and celery.
  3. Add dressing to bean mixture, and toss to coat.
